Everything You Need to Know about White Creamy Honey
Creamy honey refers to any type of honey that has been transformed into a creamy texture. This process can be applied to Sidr honey, citrus honey, or any other type of honey. The honey is made creamy by grinding a small amount of honey using a mortar and pestle, which alters the structure of the honey crystals. This ground honey is then added to a larger batch of regular honey and placed in a special device that stirs it continuously for seven days. The stirring ensures that all the crystals blend evenly, resulting in a perfectly creamy honey texture similar to Nutella.
The first difference lies in the nectar source. For example, the commercially famous white honey from Kyrgyzstan is produced from the flowers of the Amurensis plant, which is a type of legume. However, white honey can be made from any type of honey, including Sidr, mountain honey, citrus honey, or any other variety. At Droub Al-Nahl, we produce it from the flowers of the Prosopis (Mesquite) tree. After testing different types of honey for the white honey process, we found that honey from Mesquite flowers had the best taste, aroma, and texture, in addition to its many health benefits.
The second, and most important, difference between Kyrgyz white honey and the local white honey we produce at Droub Al-Nahl from Mesquite flowers is in the health benefits. The health benefits of honey vary depending on the type of honey and the health issues it’s used for.

We produce our creamy white honey from the flowers of the thorny Mesquite tree (also known as Prosopis), which grows abundantly in the Jordan Valley, especially in the southern regions. Studies show that this type of honey has unique therapeutic properties, such as:
